Ingredients:
- 500 grams of strawberries;
- 1 box of biscuits "pavesini";
- 500 grams of mascarpone cheese;
- 6 tablespoons of sugar;
- 4 eggs;
- 1 cup of Alchermes liqueur (optional);
- 1 cup of water;
- Juice of ½ lemon;
- Coconut flour as desired.
Instructions: - Take half of the strawberries, wash them, cut into small pieces and season with the Alchermes, the lemon juice, two tablespoons of sugar and the cold water;
- let it rest for about half an hour.
- Work the yolks with the sugar and join the mascarpone cheese.
- Beat until stiff, then gently fold in the mascarpone cream;
- Wash the other half of the strawberries, remove the petiole and mix them together with the juice of the ones flavored earlier;
- Begin to soak the biscuits on both sides inside the juice of freshly minted strawberries, then form a first layer in the bowl.;
- Take the strawberries cut into chunks and place them evenly over the biscuits, pour over the cream of mascarpone;
- Continue forming other layers by following the same procedures until the ingredients are exhausted;
- Finally, sprinkle the surface with the coconut flour and decorating it with a few strawberries;
- Leave at least 2 hours in the fridge.
