Ingredients:
- 320 grams of “Carnaroli” rice;
- 2 granny smith apples;
- 120 grams of Spek cut into thick slices;
- 1 shallot;
- 1 liter of vegetable broth;
- 150 ml of white dry wine;
- 40 grams of butter;
- 40 grams of grated Parmesan cheese;
- Black pepper as desired.
Instructions
1. Cut the shallot and let it brown into the butter, add the rice and toast it;
2. When the rice changes its color and it becomes transparent, melt with the wine;
3. Pour a bowl of broth, add the speck previously cut into cubes, bake on moderate fire, adding the broth at a time to cook the rice;
4. In another pot put the diced apples with 50 ml of wine and a bowl of broth;
5. Cook for a few minutes and add the apples to the rice;
6. Finished to cook of the rice and remove it from the fire. At this point add the pepper as desired and keep it with the grated parmesan cheese.
